A Post Christmas Healthy Recipe To Try

It maybe be a bit early to be thinking of recipes for after Christmas but if like us you always find you have over indulged on Christmas day why not try this great healthy recipe from our London chiropractor. You can use up that cranberry sauce that’s stored in your fridge and knock up this delicious winter salad in no time.

Ingredients

  • 2 skinless chicken breasts
  • 4 tsp olive oil
  • 2 red onions, thinly sliced
  • 200g mixed leaves
  • ½ cucumber, deseeded and sliced
  • 25g dried cranberries
  • 85g/3oz cranberry
  • Cranberry sauce
  • Juice 1 lime

How to prepare

Slice each chicken breast in half to create 4 thin breasts, then rub each slice with half the oil and season. Heat a non-stick frying pan and fry the chicken for 3 minutes on each side until cooked through. When cooked, set aside on a plate

Heat the remaining oil in the frying pan and fry the onions for 5 minutes. Slice the chicken and collect any juices. Then layer up with the onions, leaves, cucumber and dried cranberries. Mix the cranberry sauce, lime juice, 2 tbsp water and any chicken resting juices. Drizzle over the salad and serve.
